Our final day in Newfoundland was spent in the company of Lori McCarthy.
We started the day at Avondale, about 45 minutes from the city, where Lori led our group on a foraging trip around the shoreline of a small cove. She pointed out all sorts of edible plants and berries found there on the shore, and collected some that she would use later that evening to prepare our dinner. She then invited us into her small, rustic cabin where she prepared a special herbal tea for us and served bread and jam, all natural of course.
You may have heard of Lori before. She has achieved a fair amount of fame in the culinary world, and was featured on an episode of Anthony Bourdain: Parts Unknown last year. National Geographic has listed her and her business as a “hidden gem”. She is a true cultural ambassador for Newfoundland, and has dedicated her life to the preservation of the food traditions of the region, and the sharing of those traditions with visitors. Later that evening, we all met at Lori’s house in St. John’s, where she and her right arm assistant, her cousin Alex, prepared an unbelievable meal of moose ragout, root vegetables (onions, Brussel sprouts, turnips, etc.), and a salad of hand-foraged natural greens. The food was great, but what was even more memorable to me was the conversation around the table. It was so interesting to hear about Lori’s work through her business, Cod Sounds, where she teaches visitors and culinary students from around the world about the locally sourced regional cuisine and wild foods from the land and sea.
Best of all, her cabin was a perfect spot for interesting photo opportunities !
